
After 10 days of not cooking, it is time to get busy. I don’t know about you but being gone that long makes me crave a home cooked meal. Don’t get me wrong, going out to eat is great, but after about 6 or 7 days I’m ready to get back in the kitchen. I wanted to make something quick and simple for dinner tonight. One of my favorite soups to prepare is my Tortellini Soup. I got this recipe from a friend of mine during a girls weekend lake cottage get away. It was great there were about 8 or 10 of us and we all volunteered to prepare a meal. Marni made this soup for our lunch one day. No bull, it has been one of my favorites and most requested ever since. I participate in community theater and have prepared this soup for the cast of every show I have been in. It is always a hit. Hope you enjoy!
Tip. One of my FAVORITE tools I have in the kitchen is my Williams-Sonama Vegetable Chopper! This makes chopping veggies a breeze. I love that each piece is chopped the same size. I think it is key for making a soup. Also great for preparing homemade salsa. I even dice my roma tomatoes using this chopper. Make your life easy in the kitchen purchase one of these today!
TIP: I think the key ot this recipe is the VERY SMALL dice of the veggies and the sausage should be a fine crumble. Notice from the photo what I’m talking about.
TORTELLINI SOUP
1 lb. italian sausage ( I’m picky about this, I recommend using Bob Evans in the Green pkg.)
1 diced green pepper
3 cloves minced garlic
1 lg. can diced tomatoes
1 lg. can beef broth plus one small can
2 chopped green zucchini
2 chopped yellow zucchini
1 cup chopped carrots
1 tsp. oregano
1 tsp. basil
Salt and pepper to taste
1 pkg. cheese tortellini
Brown sausage with green peppers and garlic. Drain sausage, add beef broth. Bring to a boil add veggies simmer until veggies are tender. Add canned tomatoes, oregano, and basil. Simmer for awhile, add tortellini to pot cook until tender. Serve with garlic bread!
