One of my favorite salads is the Black and Blue. We often order this salad at one of our favorite restaurants here in town called Stone Creek. They usually serve it with a couple of asparagus spears which I also add if I have them on hand. Today I did not have any so left it out. I love my recipe for Blue Cheese Dressing. Honestly I do not measure anything when I prepare this, so I am doing my best to guess the amounts, you may want to add more or less of the minced onion and sugar. Taste as you make. I have gotten many compliments every time I make it. NO BULL, kids even seem to enjoy this dressing. It has a slight sweetness to it, which I think is usually a surprise to many. My husband often request this salad in the summer. I have made it for the ladies in my book club. It is a simple dish to prepare ahead of time and serve to a large crowd. It can be very affordable as well, I like to use a flank, or skirt steak for this recipe. You can marinade it if you like, I usually just pepper it really well, and add a steak seasoning mix before grilling. Always bring the meat to room temperature before grilling. The key to preparing this steak is not to over cook! Remember steak will continue to cook once it is removed from the grill. I always allow at least 10 minutes of rest time on the cutting board before slicing. This allows the juices to settle back into the meat. Always cut on the diagonal against the grain in thin strips. This meal can be prepared before your company arrives, just assemble and serve. Making it a good choice, so you can enjoy time with your friends! Serve with a crusty bread. Try it at your next book club meeting! The ladies will love it!
No Bull Blue Cheese Dressing
1 cup of real Mayo
1 cup of sour cream
1 cup crumbled blue cheese
2 tbs. Minced dried onion
2 tbs. sugar
1 tbs. lemon juice
fresh cracked black pepper
1/2 tsp. salt
Milk to thin dressing
Combine all ingredients into food processor and pulse until well blended. Cover and chill at least 2 hours. Thin with milk to desired consistency.
Black and Blue Salad
Romaine lettuce the amount will depend on the number of servings.
Flank or skirt steak ( one steak makes about 4 servings) Sam’s club sells a pkg. of 2 for about $15.00!
1 lb of bacon
Blue cheese crumbles
Chop lettuce and wash. Wrap in paper towels and allow to chill in fridge. This is key to crispy cold lettuce.
Cook bacon and crumble. Set aside.
Dice tomatoes and set aside.
Season steak to your liking, grill on each side. Allow at least 10 minutes of rest time on cutting board before slicing. DO NOT OVER COOK steak. Cut on the diagonal against the grain into bite size pieces.
To assemble salad, arrange lettuce in individual bowls, add a row blue cheese, a row of tomatoes, a row of bacon, and a row of steak. Allow guest to drizzle salad with dressing.
