French Potatoes for Easter dinner!




Wow we had a beautiful day here in Indiana. Sammy colored Easter Eggs. Then I believe he was on a mission to see how many different things he could do with Peeps besides eat them of course! Let’s see we did Peep jousting, we microwaved our Peeps, then I found out that Peeps make great air soft gun targets…No Bull they really do!
For our Easter dinner we decided to deep fry a turkey. It simply amazes me how quickly it cooks. It is never dry, never greasy, it is our favorite way to prepare turkey. With that I served my French Potatoes. I love this simple recipe. The smell of the fresh thyme reminds me of spring when they are cooking. These potatoes are also wonderful served with beef filets.

FRENCH POTATOES

5 or 6 Medium potatoes
1 1/2 cup Hvy. whipping cream
chopped chives or you may use green onions
2 lg. cloves of garlic minced
4 springs of fresh thyme
2 big handfuls of parmesan cheese

Slice potatoes paper thin, I slice mine in the food processor. I just love this kitchen tool! Put sliced potatoes into a 9 x 13 pan. In a large bowl combine remaining ingredients and pour over potatoes. Season with salt and pepper.
Bake @ 375 for 45 minutes. A slight crust will appear on top.
