I was was extremely bored this evening so I decided to look up recipes on the web. NO BULL, I came across this no bake banana pudding.
I have to admit I was a little skeptical. My boys love banana pudding, the thing that I love about banana pudding is the way the texture changes once you pour the hot vanilla pudding over them. I’m not sure that the cookie portion of this dessert will be to my liking. Maybe once it sets in the refridgerator for a few hours they will soften. I must say that the actual cream mixture had a great flavor. How could you go wrong with ingredients like cream cheese, sweetened condensed milk, vanilla pudding and cool whip! Regardless it kept me entertained for about 20 minutes preparing it. I have a house full of boys spending the night I figured I could feed it to them, that may be the true test of success!
UPDATE ON THE PUDDING- I forgot to pull it out of the fridge, so we ate it the next day. My husband said he like it better than the cooked version. I have to admit it is pretty good. I would suggest letting it sit for several hours or overnight, the cookies became soft. The filling is much more creamy and thick. I still love go old fashioned banana pudding the best, because I like it served warm out of the oven!
NO BAKE BANANA PUDDING
1 (8 oz.) cream cheese
1 (14 oz.) can Eagle brand milk
2 c. milk
1 (6 oz.) pkg. instant vanilla pudding mix
1 (8 oz.) carton Cool Whip
6 bananas, sliced
1 (12 oz.) box vanilla wafers
Cream cheese until smooth. Stir in sweetened Eagle brand and milk with pudding mix. Fold in half of the Cool Whip. Layer pudding, cookies, and bananas in dish. Top with remaining topping. Chill.
