Pasta Fagolli


I LOVE to make soup! Actually there isn’t anything as satisfying as a big bowl of hot soup and a piece of bread! I mean I like mine pipping hot! When I go to a restaurant I usually have to send it back because it is luke warm. I love the steam to be floating in the air. I enjoy making soup and I’m always excited when I find a good recipe. I stumbled upon this one day and thought I would give it a try. It was very tasty, similar to the Pasta Fagolli they serve at Olive Garden-NO BULL it was pretty darn close! The great thing about making a good soup is you can eat it for days. I always take my lunch to work…I hate eating fast food! Soup is a great meal for lunch. It always seems to get better with time.

Pasta Fagolli

2 lb. Ground beef
1 onion chopped
3 carrots chopped
2 28 oz. diced tomatoes
1 can kidney beans (red)
2 cans white northern beans
4 10oz can beef broth
3 tsp. oregano
2 tsp. fennel seeds
2 tsp. pepper
5 tsp. parsley
5 cloves of garlic minced
1 20 oz. jar spaghetti sauce
8 oz. ditalini pasta
brown meat with onions add garlic, then add remaining ingredients except pasta. Cook until veggies are tender, add pasta at end.
Pretty close to the soup they serve at Olive Garden!
