My family loves Pineapple Upside Down Cake! Sammy had 2 pieces tonight, and I’m sure he will have one in the morning for breakfast! This is a simple recipe…and yes I do use a boxed pound cake. It is one of the easiest recipes and it is delicious served warm out of the oven. I really don’t measure anything, so I will do my best to explain the recipe. No Bull, anyone can make this one and it will look like you slaved in the kitchen for hours!
Pineapple Upside Down Cake
1 box of your favorite pound cake mix.
1 can of pineapple rings reserve juice
1 small jar of cherries
4 tlbs. butter
1/4 cup of brown sugar ( I usually just grab a couple of hand fulls)
Put cake mix in mixing bowl, add 2 eggs and the juice from the pineapples. Mix for about 3 minutes until light and no lumps.
In an oven proof skillet melt butter, sprinkle brown sugar over butter. Arrange pineapple rings in pan add cherries into center of pineapple and anywhere else you see fit. My son loves cherries so I always add extra.
Pour cake batter over butter and brown sugar mixture. Put into oven and bake at 350 for 40 to 45 minutes.
Put a plate over the cake and flip it over to release onto plate.
