Thought something hot and spicy was appropriate!

Some of you may not know but my husband and I own our own business called Supreme Surface Inc. We are fabricators of granite countertops in Indianapolis Indiana. Last night around 6:00 I received a phone call stating that our business was on fire! Thank goodness I was only about 5 minutes from our location! I arrived to find at least 4 fire trucks hosing the building down. My heart stopped and and a million thoughts raced through my mind. NO BULL, watching something you have built from the ground up which employees 20 people smoldering is a sicking feeling. Bottom line is things will be o.k, it could have been much worse, we will dust ourselves off and truck forward!
In honor of this event I thought I would post my hot and spicy “Buffalo Chicken Butter Lettuce Cups”! These are amazing! Don’t worry there will be no need to call the fire department…unless of course you go over board on the hot wing sauce! This can be served as an appetizer, or as a main dish. You could simplify this and just serve over a bowl of greens with blue cheese crumbles on top. Either way this is sure to be a real crowd pleaser!

Buffalo Chicken Butter Lettuce Cups – can be served as a snack or main dish!

4 carrots, chopped up
4 celery stalks, chopped up
2 cloves of garlic
2 chicken breasts cut into small bite size pieces (1lb)
¼ of hot wing sauce
1 tbsp onion powder
A little cayenne pepper
3 tbsp of lite blue cheese crumbles
1 tsp of olive oil
Butter lettuce
Chopped scallions
Heat one tsp of olive oil in a large sauté pan and add carrots, celery and garlic. Give it a pinch of salt and let it cook for four to five minutes. Add chicken and season with salt, pepper, onion powder and cayenne powder. Stir everything together and allow to cook for about three minutes (the chicken is small and will cook fast… do not let it over cook or else it will get tough!).Once the chicken is almost cooked through, add the hot sauce and cook for another two minutes or until the sauce is hot and the chicken is cooked through.Shut the heat off, stir in the blue cheese and chopped scallions.Scoop into butter lettuce cups and enjoy!!
