Lemon Chicken Soup


I was searching the Internet and found this delicious soup recipe. It sounded simple, so I figured I could make it on a busy work night using a rotisserie chicken. I LOVE this recipe. It is light and slightly tangy. I bought a wonderful brown rice blend that I found at target it is called Rice Select from Royal Blend. I bought the Texmati White, Brown, Wild and Red variety. . I thought this would be better than just plain white rice. It was delicious! I served it with a crusty Rosemary bread, it was really good! NO BULL give it a try.


LEMON CHICKEN SOUP

3 Quarts of chicken broth ( 12 cups)
5 cups of chicken cooked ( I used a rotisserie chicken)
1 cup of brown rice
2 large carrots diced small
2 celery stalks diced small
1 small onion diced small
1 Tbs. olive oil
1 Tbs. Butter
3 lemons Juiced
1/2 lemon zest
1 pkg of baby spinach ( I would chop this slightly)
black pepper to taste

In a large pot heat oil and butter, add onion, celery and diced carrots. Saute for about 10 minutes stirring constantly. Pour in chicken broth. Heat to a boil and add the rice. After about 5 minutes turn heat to med high. Add lemon zest and juice. Continue cooking for about 15 minutes until rices seems to become tender. Add chicken and chopped spinach and simmer for 20 minutes.
