I wanted to make a soup to serve for the Super Bowl. I had been making so much chili for the games, that I needed to give it a rest. I came across a recipe for Pizza Soup. The name alone sounded like good football food. My son arrived looked in the pot and said NO CHILI! I could tell he was disappointed. I told him to give it a try, he snarled up his nose and filled up his bowl. His first words was this is pretty good! He has always been the picky one in the family…so if Ryan likes it, it’s a keeper! I thought it was a delicious soup as well. NO BULL give it a try. We topped it with shredded cheese, although I took the photo before I added the cheese. I may try adding some chopped pepperoni next time.
1 lb. Italian Sausage (I prefer Jimmy Dean in the green package)
2 T. olive oil
1 large chopped red onion
1 large diced green bell pepper
1 large clove garlic, minced
1 1/2 cup sliced fresh mushrooms
1 c. red wine
1 (28 oz size) can diced tomatoes, undrained
1 small can of tomato paste
2 1/2 c. beef stock
2 cup water
1 1/2 c. ditalini or other small pasta
1 tablespoon dried Italian seasoning*
1 tablespoon sweet basil
1 tablespoon fennel seed
favorite pizza cheese, shredded
Crumble and brown sausage in a skillet. Drain on paper towels and set aside. If your sausage is too fatty, place the cooked sausage in a large strainer and run warm water over it.
In a soup pot, heat the olive oil. Add onions, green peppers, and garlic and sauté about four minutes or until soft. Add mushrooms and red wine; cook until wine is reduced by half. Add tomatoes, beef stock, water and the seasonings. Stir.
Add sausage and heat to boiling. Add pasta. Reduce to simmer and simmer for 30 minutes.
Top with your favorite cheese and serve with a crusty bread.
